Kitchen maintained clean and organized at time of inspection.. Employees observed using good food safe practices. Good managerial control observed.. Discussed recert with CFM. Employees have current FHC. Discussed washing of apples and tongs used to handle them. Discussed food flow - including cooling methods and leftovers. Calibrated thermometer available for monitoring internal cooking temperatures.

Observed good food safety practices, thermometer at ice point, washing fruits before being cut, no bare hand contact with ready to eat foods. Discussed how left over milk and other items are handled. Not reserved. Discussed cooling and reheating methods. Discussed monitoring of food temps and observed temperature logs being maintained. Issued Permit.

    Observation: The ambient (air/water) temperature measuring device (degrees F) located in the Hobart reach-in is not accurate. CFM will order replacement thermometer.
    Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: Cold water faucet at prep sink was observed in a state of disrepair and damaged.
    Correction: Repair the @EQUIPMENT@ to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Hand Drying Provision (corrected on site) (repeated violation)
    Observation: No disposable towels were provided a the hand washing sink in the back of the kitchen beside prep table. CFM said she would refill towel holder.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Correction: Replace the drain plug to the refuse container.

    Observation: Light bulb in walk-in cooler and one of the ceiling lights are not shielded, coated, or otherwise shatter-resistent.
    Correction: Shield or replace the lights with a coated or shatter-resistent bulb.
  • Handwashing Cleanser; Availability (corrected on site)
    Observation: Soap was not provided at the handsink located in the rear of the kitchen.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

    Observation: The Hobart stand-up freezer is in disrepair.
    Correction: Freezers must be able to maintain foods in the frozen state. Repair, replace or remove the freezer from the premises.

    Observation: No hot water available at the kitchen sinks.
    Correction: (School maintenance is currently addressing the problem) Maintain the ability for the water in the hot water mixing valve to reach >= 100 F at the hand sinks, and >= 110 F at the food prep/utensil washing sinks.
  • Light Bulbs Protective Shielding (repeated violation)
    Observation: The walk-in freezer's compartment light was not shielded, coated, or otherwise shatter-resistent.
    Correction: Shield or replace light bulb with a coated or shatter-resistent bulb.
  • Lighting, Intensity
    Observation: Less than 10 foot candles of light was noted in the walk-in freezer due to an inoperable compartment light.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.
