Observation: High temp Dishmachine was observed in a state of disrepair. Unit is not working and cannot be repaired. CFM said they are getting specs for a new unit. Called and spoke to School Admin Manager and discussed the time line for the new machine. She explained bids are going in 2 weeks.
Correction: Repair the @EQUIPMENT@ to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Correction: (Dishwashing machine technician notified) Until the final rinse temperature is capable of reaching 180 F, initiate manual sanitize method in the 3-compartment sink to properly sanitize equipment and utensils after being cleaned by the dishwashing machine's wash cycle.
