Observed temperature monitoring of receiving items. Recommended daily record for new high temp dish machine. Discussed contact time of quat sanitizer. Reviewed food handler cards and the employee health policy.

Kitchen maintained clean and organized at time of inspection. Good food safety practices observed. Discussed cooling and reheating of some food items. Discussed good hand washing and employee health. Discusses alternate methods that are in place due to the Dishmachine being inoperable. Called school administrator to get time line on new unit. Issued permit.

    Observation: High temp Dishmachine was observed in a state of disrepair. Unit is not working and cannot be repaired. CFM said they are getting specs for a new unit. Called and spoke to School Admin Manager and discussed the time line for the new machine. She explained bids are going in 2 weeks.
    Correction: Repair the @EQUIPMENT@ to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: The kitchen handsink's cold water mixing valve is stripped.
    Correction: Repair the cold water mixing valve in acoordance with local plumbing codes.

    Correction: Repair the handsink's cold water mixing valve in accordance with manufacturer's specifications.

    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 180ºF. The thermostat read <162 ºF>.
    Correction: (Dishwashing machine technician notified) Until the final rinse temperature is capable of reaching 180 F, initiate manual sanitize method in the 3-compartment sink to properly sanitize equipment and utensils after being cleaned by the dishwashing machine's wash cycle.

    Correction: Replace the damaged plastic pitcher.

    Observation: There is no quaternary ammonium test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a quaternary ammonium test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Equipment and Utensils - Good Repair and Calibration
    Observation: Inoperable temperature display for the milk case and walk-in freezer.
    Correction: Repair the temperature display on the milk case and walk-in freezer so they are accurate within +- 2 degrees Fahrenheit.
