Kitchen maintained clean and organized. Temperature charts being maintained. Left CFM recert schedule. Reviewed menu items and left 2016 food handler class schedule. Gloves used to handle ready to eat foods. Issued Permit.

    Observation: Less than 20 foot candles of light was noted in the dry storage area. Bulb needs to be replaced.
    Correction: Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms

Discussed the following: Employee health policy, food handler cards, menu items (including washing of fruit), food preparation methods, sanitizing methods and barriers used to handle ready to eat foods. CFM has good knowledge of food safety No hot holding, cooling or reheating done. Left temperature chart for temperature monitoring.

    Observation: Employee observed handling ready-to-eat (RTE) food (muffins) with their bare hands. Discussed violation with CFM. Tongs were supplied so bare hands would no longer be used. If gloves are used then handwashing must occur first.
    Correction: Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
