  • Equipment and Utensils - Durability
    Observation: Inside the drawers of the large prep unit (where utensils are stored) are chipped and damaged. No longer able to be cleaned and sanitized. Discussed with CFM and agreed to using liner that will be changed regularly.
    Correction: Remove this item from the facility and replace with an approved unit as needed. Equipment and utensils must be capable of maintaining their original characteristics in order to be easily cleaned and to prevent contamination of food.
  • Nonfood Contact Surfaces
    Observation: The nonfood contact surface of the following is not designed or constructed to be easily cleanable. The 3 plastic lids covering the white bins (flour, sugar etc) are broken and chipped.
    Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices.

  • Temperature Measuring Devices; Ambient Air and Water (repeated violation)
    Observation: The ambient air temperature measuring device (degrees F) located in the CresCor hot box is not accurate.
    Correction: Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.
  • Equipment - Good Repair and Proper Adjustment (corrected on site)
    Observation: The natural gas valve under the right side serving line hot hold unit was observed not maintaining a flame while the gas was on.
    Correction: NOTE: During the inspection, the smell of gas was evident in and around the serving line hot holding unit. The kitchen staff informed me that the smell of gas is evident in and around the unit on a peridotic basis. I contacted the Portsmouth Fire Department via the non-emergency number and informed them about the smell of gas in the kitchen. The dispatcher recommended I call 911 and have the fire department investigate. Also during this call, the dispatcher spoke with the school's kitchen manager and recommended that the school be evacuated until a determination could be made as to the cause of the gas leak.
    The school was evacuated and the fire department was called via the 911 number. The fire department determined that one of the burners under the unit had extinguished allowing the gas to build up under and around the unit. According to the maintenance personnel, the burner is old and difficult to maintain a flame. There are no replacement parts available to replace the damaged valve.
    The school and kitchen were reopened and the kitchen staff were instructed to keep a vigil on the gas burners when in use until the unit could be replaced with electric heating elements.

    Observation: The door bell activation button, plexiglass tray runners, serving line plexiglass shields are in disrepair.
    Correction: Replace the door bell activation button, plexiglass tray runners, and serving line shields.
    the natural gas connection located under the serving line hot hold units are scheduled to be replaced with electric heating elements.
  • Equipment - Good Repair and Proper Adjustment (repeated violation)
    Observation: The door gaskets of the milk cases are damaged
    Correction: Repair or replace the milk case door gaskets in accordance with the manufacturer's specifications.

    Observation: The Lo Mein was not reheated before being placed in the hot hold cabinet..
    Correction: Hot hold cabinets are not designed for reheating foods. Ensure potentially hazardous foods that are cooked and allowed to cool within 4 hours of preparation are reheated so that all parts of the food reach 135°F or above before being placed in the hot hold cabinet.

    Observation: The lid gasket of the milk case is damaged.
    Correction: Repair or replace the milk case lid gasket in accordance with the manufacturer's specifications.

Transfer the current ServSafe food manager's certificate to the Portsmouth Health Department in order to be issued the 3-year food manager's certification. A clean and well-organized kitchen. Good employee food safety practices demonstrated during this inspection.
