Reviewed with the kitchen employee the following: need to replace the digital probe thermometer, and date labeling opened ready-to-eat foods stored in the refrigerator > 24 hours. A clean and well-organized kitchen. Good employee food safety practices demonstrated during this inspection.

    Observation: The kitchen employee is drinking from an uncovered container in the food preparation area.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of: (1) The employee's hands
  • Food Storage - Clean and Dry Location
    Observation: Boxes of food were observed stored on the walk-in freezer floor.
    Correction: Elevate food storage onto approved shelving with minimum 6"" legs or casters.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles (repeated violation)
    Observation: Boxes of supplies were found stored on the kitchen floor adjacent to the pizza oven.
    Correction: Store supplies in a clean, dry location where not exposed to splash, dust or other contamination at least 6 inches above the floor.

    Observation: Lights located in the walk-in cooler and dishwashing room are not shielded, coated, or otherwise shatter-resistent.
    Correction: Shield or replace the lights with a coated or shatter-resistent bulb.

Store employee drinks in non-breakable containers with a lid & straw, replace the light bulb in the walk-in cooler with one that has a shatter-resistant coating, shield the fluorescent ceiling lights in the walk-in cooler and over the 3-compartment sink, do not place duct tape on the spice shakers, elevate the boxes of food being stored on the walk-in freezer floor on approved shelving. Permit renewal issued.

    Correction: Seal the crack in the floor and replace the missing floor tiles so the floor's surface is constructed to be smooth, easily cleanable, nonabsorbent, and durable.

    Observation: The pizza fixings, bacon, and egg rolls being stored in the refrigerated pizza make unit are not maintaining a cold-holding temperature <= 41 F.
    Correction: The pizza fixings, bacon, and egg rolls store in the unit overnight were voluntarily discarded. The pizza fixings that were placed in the unit for < 4 hours were moved to the walk-in cooler for cold-holding storage until the pizza make unit is capable of maintaining cold-holding food temperatures <= 41 F.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The pizza make unit is not maintaining a cold-holding temperature below 41 F.
    Correction: Maintain a refrigeration temperature < 41 F.
