I had another "I-have-no-idea-what-I-want-for-dinner" day. I seem to be having those a lot these days and it's not good ...

So I made a no-mayo tuna salad, although really it was just tuna plus diced onion (alas, I had no celery) plus mustard plus crunchy lettuce on oat bread. It was good but didn't really feel like "dinner."

Today is my official retirement day from the college I've taught at for 19 years ... but I still have 2 weeks of summer teaching (all online, no scheduled meetings) and am SUPPOSED to teach 2 classes in the fall (but no other responsibilities -- THAT is the good part! ) so I don't quite feel retired yet. Overall I'm just feeling blah, but I don't know why.

Sorry, I'm being a grump!

I did enjoy reading about some great dinners, though! Happy weekend, everyone!

I think I'm going to grill a piece of salmon. Maybe some slaw and a little broccoli. Keeping it simple today.

Grilling a butterflied leg of lamb tonight. We are also grilling tomatoes with some olive oil, parmesan and fresh basil and serving it with butter and garlic rice. I LOVE mixing the grilled tomatoes into the rice. Roasted asparagus to round out (and my kids are not fond of grilled tomatoes) the meal.
