My own concoction. A casserole of sliced zucchini rounds (from the garden), Italian sausage, peppers, onions, covered with homemade pizza (or red) sauce, mozz cheese and some pepperoni slices on top. Not sure how it's going to taste but it looks good on paper.

Finally finished some leftovers so tonight I DID have the steak/watermelon/feta salad! I had it over butter lettuce and it was great.



The feta is 1/4 cup of half fat-free, half tomato & basil. I like them both!

Meant to add avocado but forgot, aagghh! That would have made it even better, I think. I got dressing out but didn't need it -- the water from the melon kind of "dresses" it! YUM!

It’s hot here y’all. Really hot. Miserably hot. I have not felt very inspired in my cooking. We’ve had a few lighter meals which I actually prefer. However, Randall’s had beef chuck on sale for $3.97 a pound and DH really wanted pot roast and it’s Sunday so I’m making it in the InstantPot. I’m also adding the potatoes and carrots - I usually cook them separately but I’m going to give adding them all together a try.

I went ahead and made the creamy pesto chicken tonight. I doubled the sauce but didn’t quite double the pesto that goes in it. Sometimes too much pesto is too much pesto. I forgot that heavy cream and wine would mask that somewhat. Next time I’ll even more than double the saucy bits and at least double the pesto. It was easy and tasty even without quite enough pesto.

We had pieogies sauteed up with onions and kielbasa. I threw a little sour cream and sauerkraut on top.
