Currently eating leftovers from last nights dinner - Green Chile Chicken enchiladas

One layer corn tortillas fried in duck fat
One layer seasoned and cooked chicken breast mixed with cream of chicken soup
One more layer of tortillas
One layer Hot New Mexico green chiles (Hatch)
One layer Asadero and cheddar cheese

Layer and heat like a lasagna (45 min at 350). Southwestern comfort food at its best!
