Dinner was LMML&T sandwiches on a toasted bolillo buns and air-fryer fries. Along with a can of Hamm's to drink.
The LMML&T is lion's mane mushroom, lettuce and tomato. Excellent, texture and taste is very similar to bacon. Sriracha mayo on the bun with romaine and sliced purple tomatoes. Lions mane mushrooms have been used in Asia for thousands of years to help with memory, amongst many other benefits.

T-bone steaks, baked potatoes and creamed spinach. These were from Costco and were delicious! I had 4 these are the last 2.
I'll make the creamed spinach homemade.

Early early dinner today ... 1:45 p.m.! I'd thawed a frozen meal from a few weeks ago, a chicken thigh with lots of veggies plus Al'Fez smoky harissa cooking sauce (one of my favorites). After it was mostly heated up, I added a couple more veggies to it today -- some butternut squash (I wanted to use it up before it went bad) and some riced cauliflower (which I just discovered I LOVE with "saucy" meals!).

It was just as good tonight as when I first made it weeks ago! I had it with a small slice of oat bran/flax/whole wheat pita bread.

May all your dinners tonight be wonderful!
