Spaghetti and turkey meatballs, Brussels sprouts sautéed in garlic, pepper flakes, and Better Than Bouillon (chicken). Dessert was bread pudding.

Mediterranean stuffed chicken with balsamic glaze, served with lemon rice and mint/garlic (fresh/sautéed) green beans.

Did not really follow a recipe. I pan-seared, finished in the oven and cooked to an internal temp of 165. I had no idea how it would come out, but it was very good. (It may look dry in the picture, but it was not.) It was stuffed with spinach, artichoke hearts, Sundried Tomatoes and Feta plus a few things.

Last night we had carry out. There is a great vegetarian restaurant near my wife's office. I ordered Vietnamese pho and a Tandoori Cauliflower sandwich. Both were incredible. The tandoori sandwich was much more flavorful than the pho though.

This evening, the Eagles Lodge, is holding a fundraiser dinner. One of the staff members died suddenly about a week ago, so they are raising money for her family. The menu is meatloaf & mashed potatoes with gravy & a salad bar. So we will probably go.
