I should mention that my friend cooked the ham/blackeyed peas dish for 7 hours, beans uncooked at the beginning. I'm thinking maybe cooking it longer on low brought out more of the flavor.
I will just add that when I make any kind of bean or pea soup now, I just buy a ham slice for a few bucks. DH likes plenty of ham in it, and with a ham hock you don’t get much meat.
Yes I by the ham slice too & also use ham soup base, gives a good ham flavor. Ham hocks went to a ridiculous price last time I looked, $10!! No way will I pay that.
If I see a food I am unfamiliar with on this thread I just google it to see if I might like it.
I made chicken stock yesterday, today adding heirloom beans, chicken, carrots, celery and whatnot. Garlic cheese bread.
