I've got a cabbage waiting for some love, so I'm making a cabbage casserole. Kind of a misnomer, really, because it's cooked on the stove top. It's layered with ground pork, a la stuffed cabbage.

Has to be stir fry, spring rolls, shrimp rolls, shrimp chips as we were at the Asian market downtown yesterday.
Vegetable section was strangely picked over around 9:30

I took some leftover Thanksgiving turkey out of the freezer. I will turn that into a turkey pot pie for tonight's dinner.

Homemade Swedish meatball recipe that I got from allrecipies. Homemade brown gravy with sour cream in it served over egg noodles. I usually buy that Swedish meatball mix in the packet but it's too salty. Here's the recipe:

I have a pot of chili simmering on the back of the stove. I will serve with the usual suspects. I was going to make cornbread but I am feeling a little lazy. I did make chocolate chip cookies this afternoon. The boys can have those for dessert.
You’re not lazy if you made cookies! The cole slaw turned out great - I dressed it with a sesame-ginger vinaigrette.

Sounds pretty good for a day that got away.

I’m making a dill potato salad, plus I’ve got leftovers: a 1.5 inch thick pork chop, the awesome cinnamon applesauce, and the Asian slaw. Not sure it all goes, but oh well!

Had a coupon and splurged for 2 Arbys roast beef classics while out running errands alittle while ago

1st time I have been to Arbys in close to 10+ years.... they were actually better than I thought they would be. I was pleasantly surprised. No fries or drink - just 2 sandwich's in the drive thru lane.

Tasted really salty - way too much sodium in them for anyone who may be watching their sodium intake.
