Made chili over the weekend...but will most likely save that for lunches, this week.

Thinking some kind of baked chicken drumsticks (debating marinade), roasted butternut squash, and Brussels sprouts.

We'll be having leftover chicken satay, spinach fritters and carrot & chickpea salad. Looking forward to it because it tasted great last night!

Beef shanks (in the crock pot now), rice and peas, and probably some potato salad (have to decide whether I want to cook that).

Ham and peanut fried rice with lots of ginger and veggies. I'm thinking Gai lan (Chinese broccoli), mushrooms, onion, carrot, celery, and I probably left something out of this list cause I'm still half-delirious.

I have chuck steak, chicken tenders, corned beef, and German sausage thawed, and still can't wrap my brain about what to do for dinner.
Husband has been out blowing/shoveling snow for five hours. He's having a bowl of clam chowder to warm up, and bolster himself to tackle the roof. I hate when he's up there by himself. If he falls, at least he has a couple of feet of snow to cushion the fall. *sigh*

Not sure what husband had - but I know he ate SOMETHING. Things were beeping in the kitchen, so I assume he was nuking something.


I'm probably going to eat REALLY light - I am starting a monster headache (thanks, weather!) so I may just have some cheeseball and crackers.

I'm making shredded beef enchiladas with Mexican rice. It's so good I can't wait

I'm also off work Wednesday and plan to make a Goulash recipe a friend posted on Facebook.

Lots of good, hot comfort food on these cold nights.
