It was a bad night and morning for Uncle. We missed breakfast, so I think I’ll make breakfast for dinner when he wakes from his nap. Omelets and French toast I think.

Whole turkey breast is in the oven-
(the leftover ones from Thanksgiving are on sale at the local grocer for $1.99/ lb for the organic, natural ones- no additives or excess brining )

coat it in mayo and herbs, lay it on sweet potatoes, stuff with a lemon and veggies, glaze halfway through with maple, butter, salt and pepper...
(Ill make some Brocollini later on for another side)...

its a new fave to start off the week- the carcass will be soups for most of the week, the meat for sandwiches, tacos, enchiladas , or just grab and eat!
