I made some adjustments to this recipe

Cooks.com - Recipe - Low Fat Scalloped Potatoes

I added some FF Chedder and used FF Parm... it was a pretty good lowfat version... I actually enjoy the challenge of changing everything over to as low fat a recipe as I can make it... Why waste the fat on things like dinner when you can have a COOKIE?

I wound up steaming a package of GG sugar snap peas without sauce to go with the tails last night. They came out a bit soggy, but rather tasty. Not very elegant to go with the lobster tails, but that was what I had.

For tonight I'll saute the remaining crabmeat with scallions in butter and serve over pasta. Between last night and tonight, this should be our monthly quota for butter.


Elston - OMG. Reading your post on mussels was like reading poetry! Steamed in white wine with garlic is my favorite way to make them. I've steamed them in a small amount of 50/50 chicken broth/vodka (with garlic) too and they've come out delicious.

CW - Sounds yummy. Thanks for the recipe! Enjoy the rest of your vacation

Lacey - My all time fav restaurant dish is lobster fra diavolo.... served on a bed of linguine and surrounded by fresh sea scallops, clams and mussels. Mmmmmmmm!!! I haven't had that since I was on the east coast either

MWBookworm - There are several reasons I do not like Mexican food, but a cow's eye? Ugh!! That will go at the top of the list!

Miguel's Mom - Sounds quick and easy! Was that already cooked spaghetti you used?

We've found that another good way of adding a creamy feel to recipes without a lot of calories or fat is to use fat-free evaporated milk. Not the sweetened condensed kind - you can get the non-sweetened evaporated milk in a fat-free variety now. We use it in soups that have a cream base, like clam chowder or potato soup, as well as in casseroles, and it works quite well.

I did not know that! Thanks for sharing... I am doing my groceries today so I will snag some while I am there...

Yes, they were leftovers I found in the freezer so I just defrosted them and off they went into the pan.

Sounds good.

And you're right...I'm amazed Paula has lived to be her age with all that butter, mayo, sour cream, etc.

As far as the tamale recipe--good luck. Those are pretty involved from what I have heard. I do think there are quite a few sports fans up here that can give some some good hints for a variety of party foods. Simple but good foods. I'll see what I have in my recipe file too and send it on to you. Your chile is wonderful by the way!
