Correction: Unit air temperature measured 47-52. Unit was adjusted and PIC will watch temperature, if it does not come down, service will be called. TCS foods were replaced.

Manager was aware of the complaint. Sani-buckets are changed every 2 hours. Knives wiped down with sanitizer cloth every 3-5 sandwiches and are cleaned/sanitized in 3 part sink every 3-4 hours. QT used in sani bucket was at 400 ppm at the time of my visit. Sanitize bucket stored on the floor - recommend keeping it off the floor. All other practices are in compliance.
