Raw foods are being prepped. Risk will change. Permit expires 7/31/14. Owner to call me to discuss the use of whole shell eggs. This is a repeat problem that must be resolved.

    Observation: The prepared ready-to-eat (RTE) chicken in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. PIC discarded.

    Observation: Establishment is serving a highly susceptible population but is not complying with requirements of 12 VAC 5-421-950. Whole shell eggs are used to prepare scrambled eggs in bulk for adults.

Complaint received regarding bed bugs. Facility uses US Pest Control. They were called today by director. Previous visits by US Pest were: 7/13--treated for bed bugs

Raw chicken, raw ground beef and whole shell eggs found in freezer/refrigerator. Since you do not have a ventilation system you cannot cook on top of the stove. You may boil water. Leftovers are not allowed due to only homestyle refrigerators available and proper cooling is difficult to do properly. Risk increases when you deal with raw animal products. Workers to be aware of possible cross contamination. PIC passed DOK.

    Correction: Since you serve a highly susceptible population you cannot serve whole shell eggs to clients. Pasteurized liquid eggs are acceptable. We have discussed this before. Whole shell eggs may be used for baked goods (cakes, cookies).
