    Correction: Clean thoroughly.

    Observation: Concrete floor on 3 compartment end of kitchen is dirty. Ceiling panels above prep area have food splashed on them. Floor drain inside walk-in is dirty. Pipes to water heater have a layer of dust. Tower wall behind 3 compartment is dirty.
    Correction: Clean these areas.
