Observation: Observed a badly dented can of tomato sauce on the rear can rack (can dated 2/12 on top).
Correction: Refrain from using badly dented cans of foods. Segregate dented cans from those to be used. Can was taken off rack.

Observation: Observed a bag of cheese/opened can of anchovies in the tall reach-in refrigerator at end of line at 56/57 degrees
Correction: should be 41 degrees or below. Observed the ambient air temperature of the tall reach-in unit was 57 degrees

Observation: Observed box of brownies/cookie in refrigeration unit at 57 degrees (boxes not product to remain frozen). Per employee policy deems that these are held for 4 hours.
Correction: If using time instead of temperature as a means of control, document times (time in/time to be discarded). Times supplied.

Observation: The cook is drinking from an uncovered container in the food preparation area.
Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles. Drink was removed.

Observation: Sodas stored beside and under handsink.
Correction: Relocate.

Correction: Repair. Pic stated this has been ordered.

PIC knew foodborne illness symptoms and 2 of 5 of the enteric diseases with which to exclude workers. Note: do not prop walk-in door open with a can of food. One walk-in is not working - plans to replace both walk-ins with one large walk-in. Sufficient light is required.

Observation: Chicken poppers dated 8/4-8/11. These exceeded 7 day shelf life.
Correction: PIC discarded. Remember 7 days include day of prep or opening therefore food opened on 8/4 would expire 8/10.
- Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site)
Observation: Sanitizer in 3 compartment found at >500 ppm.
Correction: Sink was dumped. Also use 75 degree water instead of hot.
