    Observation: Wiping cloths improperly stored between use. (Sitting out on counter surfaces,when not in use).
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Critical: Pests - Controlling Pests*
    Observation: Harborage/Breeding conditions exist for fruit flies. (Fruit Flies in back kitchen area).
    Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces. Have pest service come and treat for fruit flies and store wet rags in container with secured lid.
  • Mops - Drying Mops (repeated violation)
    Observation: Mops and brooms not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use. Secure hooks to wall for hanging mops/Air Dry.

If unable to repair the Kick Plate/Vent Cover, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: 2 door Delfield Reachin Refrigerator bottom ventilation skirts was observed in a state of disrepair and damaged.(Missing/Broke)Discussed with Operations Manager to correct violation.
    Correction: Repair/Replace the Delfield 2 door refrigerator ventilation skirts to a condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the unit skirts,replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
