    Observation: No disposable towels were provided at the hand washing lavatory in the Pizza Hut kitchen next to 3 compartment sink.(Corrected)
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

  • Cloths - Wiping Cloths; Use Limitation (repeated violation)
    Observation: Wiping cloths improperly stored between use.
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Equipment Openings, Closures and Deflectors
    Observation: Food contact areas in the main kitchen are exposed to contamination since thes skirt around the food storage (Pizza prep area cooler is not tight and there is no apron provided to deflect contamination from the opening.
    Correction: Provide a skirt around the food storage area to prevent drip, condensation, or dust contamination of the food contact area.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface(Floor) of the walkin cooler had accumulations of grime and debris/melting ice/water buildup/pooling of water.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted, or might be of a safety issue also.
  • Equipment and Utensils, Air-Drying Required
    Observation: Pots/Pans were found stacked wet(Nested togerter) after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed
    Observation: Floor juncture in walkin cooler is not secured/ coved and closed to no larger than 1/32 inch space.(Floor material gapped and coming apart).
    Correction: Secure/close/Cove/ floor area with smooth and cleanable material. Management on site(Work order has been wtitten-Work to begin today IAW General Manager on site.)
  • Physical Facilities in Good Repair
    Observation: Walkin in cooler floor/door is not maintained in good repair
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.Ice Build-up on interior freezer door/window area,which is leaking water to interior floor area of walkin cooler and outside area of cooler(Safety/Dangerous issue-Melting ice to floor area..

    Observation: There was no temperature measuring device located in the Pod Express Milkshake refrigerator.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Pizza Hut Walkin cooler/Frezzer was observed in a state of repair and condition that prevents necessary maintenance and easy cleaning.(Ice Buildup on window in unit and water accumulation on interior floor of cooler
    Correction: Repair the Walkin cooler/Pizza Hut to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. Leaking water or condensation on interior floor area are not acceptable.
  • Warewashing Equipment, Determining Chemical Sanitizer Concentration
    Observation: The operator is not testing the chemical sanitizing solution to ensure proper concentration of the solution.(Pizza Hut)
    Correction: Use a chemical sanitizing solution test kit to ensure the proper concentration of the solution.
