    Observation: Improper use of wet wiping cloths.
    Correction: Use clean wet wiping cloths for wiping spills from food-contact and nonfood-contact surfaces of equipment. Store wet wiping in a chemical sanitizer at the proper concentration between use.
  • Critical: Cooling*
    Observation: Chicken Salad (Salad Bar Area),Chicken (International Station),and Mashed Potatoes (Gluten Free Station) noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and from 70°F to 41°F or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Discussed issue with Manager on site during inspection.Corrected.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the Pizza area reachin cooler.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.Corrected.

    Observation: Wiping cloths improperly stored between use/various sanitizer buckets had Zero (0)), concentration measured in solution.(QT).
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed
    Observation: FloorTile in Home Zone is not coved and closed to no larger than 1/32 inch space.
    Correction: Cove floor Tile juncture to no larger than a 1/32 inch space.(Cracked and Chipped Tile floor).
  • Hand Drying Provision (corrected on site)
    Observation: No disposable towels were provided a the hand washing lavatory in the Home Zone prep area handsink.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials.Corrected on site.

    Observation: Light bulbs in Dishwasher room,/Catering area in the front of house is not shielded, coated, or otherwise shatter-resistent.
    Correction: Shield or replace light bulb with a coated or shatter-resistent bulb.
  • Physical Facilities in Good Repair
    Observation: Catering/Front of House-Ceilings,Wall-Tiles-Covening to floor junction and Walls/ peeling wall paint is not maintained in good repair/All areas/corners of walls in Kitchen Prep area and Dishroom Hallway in disrepair.(Above prep sinks).
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.(Major Concern!!!).

Post Certified Food Manager's Certificate and Health Permit at front service entry.Dry storage and restrooms ok. Front service stations:Home Zone,Omelet,Pizza,International,Salad,Breakfast.Fresh Pasta/Quick to Order,Gluten Free Station.Food received today at proper temperatures from Cisco.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Ice Machine drain was observed in a state of repair and condition that prevents necessary maintenance and easy cleaning.(Water Backing up/Floor area)
    Correction: Repair the drain to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the drain, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.To be corrected today at 3:00 pm.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the Hood filters had accumulations of grime and debris.(example-International Station)
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: The handwashing sink at the back prep area kitchen is equipped with separate cold and hot water petal faucet.Petal for hot water not operating correctly.
    Correction: Remove and replace the separate hot water petal to operate properly & capable of providing an adequate flow of water at 110°F and above.
  • Lighting, Intensity
    Observation: Less than 10 foot candles of light was noted in the walkin dairy cooler.(Dim Light-front of inside unit).
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

    Observation: Chicken Salad in the Deli area noted not being adequately cooled to prevent the growth of harmful bacteria.Temp. of product was 55*F dated 2/4/2013.(34 lbs.voluniatarily discarded).
    Correction: Cool potentially hazardous foods prepared from ingredients at ambient temperature to 41°F or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Tile wall area in dishwasher area is not maintained in good repair(Missing tiles and exposed piping).
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • Pests - Removing Dead or Trapped Birds; Insects; Rodents; and other Pests
    Observation: Dead or trapped roaches were found on the premises( Inside Light shields/covers in Grill and dessert area.
    Correction: Remove dead or trapped birds, insects, rodents, and other pests from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.Area has been treated for roaches through ECOLAB on 1/15/2013.
