Observation: Improper use of wet wiping cloths.
Correction: Use clean wet wiping cloths for wiping spills from food-contact and nonfood-contact surfaces of equipment. Store wet wiping in a chemical sanitizer at the proper concentration between use.

Observation: Chicken Salad (Salad Bar Area),Chicken (International Station),and Mashed Potatoes (Gluten Free Station) noted not being adequately cooled to prevent the growth of harmful bacteria.
Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and from 70°F to 41°F or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Discussed issue with Manager on site during inspection.Corrected.

Observation: No disposable towels were provided a the hand washing lavatory in the Home Zone prep area handsink.
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials.Corrected on site.

Observation: Ice Machine drain was observed in a state of repair and condition that prevents necessary maintenance and easy cleaning.(Water Backing up/Floor area)
Correction: Repair the drain to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the drain, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.To be corrected today at 3:00 pm.
- Non-Food Contact Surfaces
Observation: The nonfood contact surface of the Hood filters had accumulations of grime and debris.(example-International Station)
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: The handwashing sink at the back prep area kitchen is equipped with separate cold and hot water petal faucet.Petal for hot water not operating correctly.
Correction: Remove and replace the separate hot water petal to operate properly & capable of providing an adequate flow of water at 110°F and above.

Observation: Less than 10 foot candles of light was noted in the walkin dairy cooler.(Dim Light-front of inside unit).
Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.
