    Observation: Observed an accumulation of oil on the green racks and tables throughout the kitchen. Also, grease on the lids for the pizza dough and stands for the chicken wing bowls.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: Observed oil on the wall and floor under the pan oil station. An accumulation of old food was observed in the floor drain under the dish machine. Also, the men's urinal is in need of cleaning.
    Correction: Clean.

    Observation: Observed spray bottles of different colored liquids that were not labeled or the writing was rubbed off.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

This was a risk factor inspection. The following good retail practice violations were noted: 1. mop water being dumped outside. 2. Dish machine filthy as well as the floor and drain around the machine. 3. The pizza cutting area was greasy. Overall this kitchen needs a good cleaning.

    Observation: Observed the employee on the pizza make table chewing on something that turned out to be a cough drop.
    Correction: If employee needs the cough drop he should not be opening and closing mouth but keep mouth shut. Employee was removed from line.

    Observation: Observed the employee on the pizza make table cough directly over a pizza that was being made without covering his mouth.
    Correction: Employee was removed from make line. Pizza discarded.

    Observation: Observed grease, dust and food debris on the green racks throughout the facility. Also observed mold on the outside of the refrigerated pass through refrigerator between the kitchen and the wait station.
    Correction: Clean.

    Observation: Observed grease, dirt, mold and/or debris on the floors in the fryer area, the pan oiling area, and dish machine area. Also, grease was observed on the wall behind the pan oiling area.
