Post a NO SMOKING sign in a conspicuous location. Consumer advisory needs adjusting. Call me with questions. PIC answered employee health questions. Make sure all workers know when to stop working. We are in the middle of flu season.

    Observation: Chicken broth found in closed tubs stacked in walk in at improper temperatures. This was cooked yesterday.
    Correction: Cool to 135 to 70 within two hours and then to 41 F in 4 more hours. PIC discarded.

    Observation: Tendon held at 49 in make table. It was found on top of another pan.
    Correction: PIC relocated.
