    Observation: Observed slightly elevated temperatures in bagel reach in cooler (butter, cream cheese 45F), and back side prep unit (cheese 44F).
    Correction: Bagel reach in door was adjar - ensure it closes securely to maintain temperature. Back side prep unit did not have all prep top pans in place, allowing air to escape.

    Observation: Observed inside ice machine (plastic baffle) in need of cleaning.

No cooking, foods received ready to eat, except pasteurized egg liquid. 300 ppm QAC in line bucket. Note: at first, no sanitizer at dishmachine, full bucket, primed, then 50 ppm chlorine. Floors generally clean except behind oven and proofer. Annual permit issued.
