The facility was not in operation at the time of the inspection.
The facility will need to be cleaned before opening, including oven drawer, gaskets to refrigerators and shelves.
Food workers will need food handler cards.

  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the homestyle refrigerator.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Sanitizing Solutions, Testing Devices (repeated violation)
    Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
    Correction: Obtain a precision chlorine paper test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
  • Lighting, Intensity
    Observation: Several light bulbs burnt out.
    Correction: Replace light bulbs.
  • Toxics - Presence and Use Restriction (corrected on site)
    Observation: Unnecessary poisonous or toxic materials found in the food establishment. A insecticide powder was found stored in the kitchen.
    Correction: Remove unnecessary poisonous or toxic materials.

No foods were at facility at time of the inspection. All refrigerators and freezers are properly cold holding.
Notes: Test strips almost out. Obtain new chlorine test strips (precision chlorine). Tables in the middle of kitchen have worn surface and metal shelf of prep table is just beginning to show small rust spots. Repair or replace. Clean knife storage container. Clean bottom shelf of storage rack and bottom shelf of prep table. Some light tile damage in noticed.

  • Equipment - Good Repair and Proper Adjustment
    Observation: The following equipment was observed in a state of disrepair and damaged: Oven mitts torn, brown table edge worn/paint peeling, prep table lower shelf rusting, quarter molding not secured/sealed to front counter (right side).
    Correction: Repair to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability, or replace.
  • Equipment and Utensils, Air-Drying Required (corrected on site)
    Observation: Cooler that had been cleaned were not inverted to allow to dry before lids were sealed on them.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Ceiling fan, exhaust fan vent above stove and edges of floor in the kitchen are noted in need of cleaning.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

No temps were taken due to no food food being available. The establishment is required to have a food handler's certification since they area preparing hot dogs and other prepackage products. Operator did obtain her food handlers certification after the evaluation.

    Observation: None of the working personnel had a food handlers card.
    Correction: Operator obtained a food handlers card after the evaluation.

    Observation: Employees or applicants are not aware of the reporting procedures concerning information about their health and activities as they relate to diseases that are transmissible through food, including the date of onset of jaundice or of an illness due to Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus
    Correction: Have the license holder require employees or applicants report to the person in charge any information about their health and activities if they are diagnosed with or had a past illness from Salmonella Typhi, Shigella spp., Escherichia coli O157:H7, Hepatitis A virus or Norovirus. EHS provided an employee health policy.

    Observation: Homestyle knife block in use.
    Correction: These are not approved for commercial use. Remove. Provide approved knife rack e.g. magnetic rack.
  • Cooling, Heating, and Holding Capacities
    Observation: Homestyle refrigerator currently holding at or above 48*. Currently, no phfs are stored inside the unit.
    Correction: Refrigeration must be capable of holding at or below 41* to ensure food is at or below 41*. Follow-up needed prior to permit issuance.
  • Temperature - Food Temperature Measuring Devices - Provided (repeated violation)
    Observation: Digital food thermometer not provided/located.
    Correction: Provide at least one since they are tip sensitive.
  • Equipment - Fixed Equipment, Spacing or Sealing (repeated violation)
    Observation: Hand sink separating from the wall.
    Correction: Seal.
  • Good Repair and Calibration of Thermometers
    Observation: Thermometer inside the refrigerator is not accurate.
    Correction: Replace.
  • Outer Openings - Protected
    Observation: Hole in mesh screen on door.
    Correction: Repair/replace screen to prevent pest entry.
