All temperatures were taken internally unless otherwise noted. It has been noted that the outside refuge container was open and a significant amount of trash is notice around the dumpster area. Keep the dumpster closed and the area free of trash to minimize the presence of rodents and other pest.
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site) (repeated violation)
    Observation: Pizza located in the warmer (112*F) hot holding at improper temperatures.
    Correction: Hot hold potentially hazardous food at 135°F or above to inhibit the growth of harmful bacteria. Pizza was reheated to 165*F and the temperature on the warmer was increased.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Individual butter packets located on the service counter (81*F) was cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Butter packets were relocated to the freezer and the EHS recommended storing on a ice bath. Ensure ice is above the level of the food in order to maintain required temperature (41*F or below).

Due to the age of the building, the facility does not comply with current code requirements. In the event of a change in operator or remodeling, the facility must be brought up to the current code requirements. This may include the addition of one or more handsinks, improved lighting, repair of structural deficiencies, and repair or replacement of damaged equipment, and proper installation of laundry facilities.
EHS noticed that the drain piping coming from the walk-in cooler was extended down into the floor drain. There should be a air gap between the piping and the drain to prevent back siphonage.

    Observation: Wiping cloths improperly stored without the proper level of sanitizer solution
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Critical: Backflow Prevention, Air Gap*
    Observation: An air gap between the water supply outlet and the flood rim level of the ice maker is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.
    Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.

    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period. Hamburgers were reheated to a final temperature of 180*F.
  • Equipment - Fixed Equipment, Spacing or Sealing (repeated violation)
    Observation: The kitchen handsink adjacent to the janitor room is not sealed to adjoining equipment or walls.
    Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.

    Observation: The following physical structures is not maintained in good repair:
    >> Pipes above Hobart reach-in cooler 2 observed with exposed installation
    >> Pipes in rest-room observed with exposed installation.
    >> Holes in walk-in floor.
    >> Floor coating/ paint under steamer and kettle deteriorating.
    >> Tiles located at the left serving line noted as being damaged throughout.
    >> Ceiling plaster in the kitchen damaged.

    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Food pans were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

There is currently a work order in for the 3 compartment sink. The pipe that supplies hot water has a severe leak. When the sink is not in use the hot water supply to the sink is cut off on order to prevent flooding.
