No risk factor violations. Note: observed employee handling sheet trays of raw chicken (juice spilling over edge on one tray) and not changing gloves after that task. Employee continued working with contaminated gloves touching things like walk-in door handle and small prep door handle. Change gloves after being contaminated. Discussed large pieces of meats such as beef being cut after it had rested to allow proper cooling. 135 to 70 degrees in 2 hours, 70 to 41 degrees in 4 hours.
