I am going to try making fudge this weekend My mother passed away in Spring of 2022, I have the case where she kept all of her handwritten recipes and found the fudge recipe which requires marshmallow cream and bourbon Now she never drank but she did keep Jack Daniels on hand for cooking fudge. She would make a recipe early December, just to test it out . She claimed that humidity and temperature would affect it. Once she was satisfied that she remembered exactly how to do it, she would make 4 times the batch using the biggest kettle on the gas stove that we owned. She would then wrap it up and they would give it to friends and neighbors for Christmas. She saved metal tins and plastic containers to store it

We always make shaped Christmas cookies. When my kids were younger they liked to ice them. And I still have all my cutters
My wife does not like to bake or cook much so I do most of it here at the Big Cat's house (not the Cathouse)

One year, my mother in law and I vowed to cook treats We never got past cookies and fudge from a mix. Sadly she passed away in the fall of 2022 and I did no baking last season. This year, I will also do Banana rum Cake, MAYBE vanilla wreaths, which is just the standard unbaked chocolate oatmeal cookie recipe without the chocolate, formed into a wreath and garnished with two red hots and a bit of green dye

ALSO I promised my son a chocolate meringue pie, and although it take benadryl due to my pecan allergy, I am going to do a German chocolate pie. Which is a pecan pie with coconut and chocolate. I wonder if I could do that with Almonds like I do the cakes?

I made my red & green M&M Christmas cookies AND - for the first time - chocolate crinkle cookies. OMG, they look just like the picture and are good!! I'm exchanging with a friend who is also making two types of cookies. We'll make little bags with 4 types of cookies to give to our friends Felt good, I was at it for a few hours. Made one extra batch of batter for each cookie and will make more tomorrow. Yay for me!

I make cuke rounds with sun-dried tomato cream cheese and topped with a bit of smoked salmon. The colors are very festive.

Just ran an errand to Fleet Farm. They carry a good selection of decent chocolate treats, most in a choice between milk or dark. I picked up two packages for chocolate orange sticks for DH. They used to be made by Brach's I think. Now they are difficult to find around here.

Sticks of orange jelly and rind covered with dark chocolate. Yum. Also, just because it's a holiday, bought a package of Grand Marnier chocolate pecans and Amaretto chocolate almonds. Finally, just for good measure, dark chocolate caramels with sea salt.

Not sure if I want to share at all.

Tomorrow I'm baking a loaf of gum drop bread for a friend who mentioned in passing, kind of wistfully, that she remembered her mother baking it when she was little. Because she has diabetes I looked high and low for sugarless gumdrops but none were to be found. I finally ordered some Italian sugarless jelly candy that is shades of the rainbow and unique fruit flavors. I'll have to chill them before slicing but I think it'll fill the bill.

I'm really excited about this because in the same conversation she mentioned a two cake pan with a single handle that her mother used to use. Not sure what you call them or how they work but it looks like a deep divided pie plate. Apparently you can frost the top of one and flip the other over it?

Said she'd looked for years but couldn't find one. I've been looking since she told me with no results but one day recently browsing the Salvation Army secondhand there one was! These will be my Christmas gifts to her - memories of her mother treats.

Chewy Chocolate Walnut Cookies
Courtesy of Craig Freeman, Chanticleer Café & Bakery
Makes about a dozen 4-inch cookies

2½ cups (11 ounces) walnut halves
3 cups (14 ounces) powdered sugar
¾ cup (2.2 ounces) cocoa powder (use Dutch-process cocoa for a darker color and a
more intense flavor)
¼ teaspoon salt
4 large egg whites (4 ½ ounces)
1 tablespoon vanilla extract

Preheat the oven to 325 degrees F.

To toast walnuts, spread in a single layer on a baking sheet. Toast in oven for 8 to 10 minutes, or until the nuts are light brown and fragrant. Once walnuts are cool, chop coarsely.

Line two baking sheets with parchment paper.

In a large bowl, combine the powdered sugar, cocoa powder and salt; mix with a rubber spatula until thoroughly blended. Stir in chopped walnuts, and mix until they are coated with dry mixture. Add egg whites and vanilla. Mix until batter is moistened; it should be thick and goopy.

With an ice cream scoop or level 1/3 cup measure, scoop the batter onto the prepared baking sheets, about 3 inches apart. The cookies will spread considerably.

Bake at 325 degrees for 16 to 18 minutes, or until the tops become shiny and small thin cracks appear on the surface of the cookies. Let cookies cool completely before removing from the pan. Store in an airtight container for up to two days.

We won’t be using this exact recipe but it’s an example of what a syrup cake is. As for its texture and taste, it’s a soft cake similar to a spice cake with a hint of cane syrups flavor which is similar to but milder than molasses. It works great as a breakfast cake to serve with coffee or breakfast tea. The home smells of the delicious spices used in the baking of this cake.

I made Seven Layer Bars this morning, but with my favorite layers:
The usual graham crackers, butter, and condensed milk
Caramel bits
Coconut
Milk chocolate chips
Salted mixed nuts

So yummy!

I totally love to bake cookies. But my knees are bad and standing at the counter really hurts. So I'm afraid I may have to cut back this year. Usually I make about 5 different cookies, and I like to rotate in a new recipe every year, and a batch of fudge. My usual choices are: Chocolate chip, sugar cookies, pumpkin cookies, fudge brownie cookies, snowballs. And fudge.

Elderly mom wants a Holiday Fruitcake...Costco used to have good ones years ago but not anymore unfortunately. My local Wal-mart doesn't have them either (only 3 bucks for a 12 ounce cake-best deal on their website though). The only other place I found them is my local Albertsons at $11.99 for a 14 ounce cake (link below). Any other places still selling fruitcakes out there?
