    Observation: Interior of bulk beverage ice machine is visibly soiled with some black/slime mold build up. Middle soda dispenser nozzle at bar has some slime/sugar mold build up.

    Observation: Raw chicken is stored in a bottomless drawer above pre-cooked deli meat in the 6 drawer meat cooler under the grill.
    Correction: Prevent nesting of raw animal foods and store raw animal foods in order of decending hazard to prevent cross contamination. During inspection, employee re-arranged the cooler and the raw chicken is now stored in the bottom drawer. Correct By: 24-Mar-2014

    Observation: Cooked chicken wings in the walk-in cooler are not date marked.

  • FOOD CONTAMINATION PREVENTED - MISCELLANEOUS CONTAMINATION
    Observation: Food stored in the 3 door reach-in prep top cooler which is used for the consumption of consumers is subject to potential contamination by employee personal food (diced ham and eggs) that is stored on the top shelf of the cooler.
    Correction: Employee personal food items must be kept seperate from food used for consumers in the establishment. Store employee food items in a seperate cooler or designate a specific area at the bottom of a cooler for employees personal food items. Correct By: 25-Mar-2014
  • EQUIPMENT AND UTENSILS - GOOD REPAIR
    Observation: The sanitizer concentration of both dish machines is 0 ppm.
    Correction: EcoLab has been called. The dish machines are not to be used until EcoLab services the machines and a safe concentration of sanitizer is tested using a test kit. The 3 compartment sink may be used for dishes as this is a slow period for the establishment. Test the dish machines every day to verify that they are properly sanitizing. Correct By: 26-Mar-2014
  • HANDWASHING SIGNAGE
    Observation: There is no handwashing signage provided at the handwashing sinks located behind the bar, in the basement bathroom and both the men's and women's bathrooms on the first floor.
