Observation: Taco meat/ground beef in steam hold table was hot held at 129 degrees fahrenheit. Meat was held only a couple hours at or around this temp. so meat was rapidly reheated on grill to 167 degrees fahrenheit prior to end of inspection.
Correction: Maintain hot potentially hazardous foods at or above 135°F. Correct By: 19-May-2015

Observation: 4 drawer prep line cooler is not equipped with a permanently affixed temperature measuring device inside cooler drawers.

Observation: Employee noted working in food preparation/cooking area without a hair restraint (FOR HAIR HANGING IN A PONY TAIL - TOP OF HEAD IS COVERE WITH A BALL CAP.
Correction: Provide employees working in food preparation and cooking areas with effective hair restraint (hat, hair net, beard restraint, etc.). PONY TAIL MUST BE NETTED OR UNDER BALL CAP. Correct By: 19-Aug-2014

Observation: Ice scoops in both ice bins at bar had handles lying in ice - mproperly stored.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F. Correct By: 25-Aug-2014
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
Observation: Several wiping cloths used for wiping counters and food prep surfaces are stored on food prep surfaces.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution between use. Correct By: 18-Aug-2014

Observation: Thermometers in some coolers are not properly located.
Correction: Reposition thermometer so that it is located in the warmest part of the refrigeration unit. Correct By: 11-Aug-2014
