Meat shreds, particles observed behind slicer blade and under blade guard. Machine was shut down and will not be used until cleaning and sanitizing. Manager will post sign above machine about frequency of cleaninG ASAP.

Correction: Provide the asterisk next to the consumer advisory for animal foods served in a raw or undercooked condition to direct customers to the warning. Correct By: 30-Mar-2015

Observation: Flour in basement is stored in unlabeled container.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient. Container was labeled during inspection.

Observation: Dishwashing racks were observed improperly stored on floor.
Correction: Clean equipment and utensils, laundered linens, single-use and single service articles shall be stored in a clean dry location, not exposed to contamination and off the floor. A milk crate was found during the inspection and used to store dish racks off floor.

Observation: No handwashing signage provided in female employee restroom handwashing sink.
Correction: Provide handwashing signage at all handwashing sinks used by food employees. Signage was posted during inspection.
