Mom's accent bordered on industrial strength. Of course she'd play it up a bit whenever her Chicago inlaws were in town!

Oh man, I know what you mean with your mom. I have to admit, when I am around certain northerners, I tend to play mine up a bit too! Hey, what the heck!

Hey Texas Reb!
I'm not sure weather I am going to work or retire just yet. I have a "hitch in my gitalong" and am about to have the fifth surgery on my legs in five years.. I am and have been a professional Chef for over thirty years and you have to be able to walk and lift for a lot of hours to do the job. I believe we are about the same age, I am 52 and would like to work, but it may require a substantial amount of re-training. I may be interested in opening a business in Texas. Of course that takes a lot of money, which I am a little short on now, like a lot of folkes.
Nice talking to you, stay in touch. Now that I have found this site I will be on here regularly.

A professional chef? Hmmmm. Well, we get out to East Texas at least a couple of times each year (plan to retire there! LOL, near the Jefferson/Caddo Lake area) and each time we go out there, there seem to be business rentals up for sale and all. You know how we Texans love to eat! LOL

I noticed some in Mineola and Daingerfield...and Jefferson. And Marshall.

Anyway, you might look into a rent to buy type thing...and do what you do best! What do the rest of y'all say? Anybody know any places out East Texas way that might fit the bill for Bill?

By the way, how's the BBQ down that way? I am trained in fine dining but there ain't nothin' better than good BBQ!!. I love me some Texas style Brisket!!

I am one of those funny Texans who prefers pork over beef (which I find is often top dog in East Texas!). I am thinking we once had a thread on it. If we didn't we should've.

Hell, hang on...gimme a sec. I will start one! LOL
