In most restaurants in Germany now the Schnitzel is made from pork because veal is so expensive here. Veal is expensive in the grocery stores too so, again, people use pork when cooking at home. In Poland they also use pork alot for the Polish version.

Welfare Cafe in Welfare, Tx. has the best schnitzel and brats. The owner is German and a gourmet cook.

Yeah, I have to agree with elnina, have you ever been to Germany?

Not trying to be disagreeable, and they food in Welfare may be very good; but when you've had the opportunity to have authentic German food it is hard to make a comparison.

We have found a few places that were good, but since I get back to Germany once or twice a year and have the real thing, I know that the food here doesn't come close!

Still, as we sometimes get out that way, we'll definitely check it out! Thanks for the recommendation!

A lot of that is because "German" food in both places has had 100 years to evolve independently.

I fully agree! This was first evident to me when I saw "wurst tacos" in New Braunfels!

But much like there's "Tex-Mex," maybe there needs to be a term called "Tex-Germ!"
