Our version of potato salad:

Red skin potatoes
Sprinkle of vinegar
Salt
Hellman's mayo
Dry mustard
Minced green pepper
Minced shallot
Hard boiled eggs
Celery seed
Paprika

An older neighbor always mixed some Catalina dressing with the mayo. It was delicious salad despite the strange shade of pink.

Edited to add that potato salad is always better when the potatoes are warm when you make it. If you let the potatoes cool first then they won't absorb the flavors of the dressing as well.

I always make deviled eggs & egg salad while the eggs are warm. too.

There's nothing wrong with that. I know someone who adds pickled beets, but I just can't handle pink potato salad.

Mine is just mayo, black pepper, lots of apple cider vinegar, celery, onion, and potatoes. YUM!

Once I used paprika and it turned a pasta salad pink and I found the visual appearance to be a huge turn off. Discarded most of the salad though it tasted ok.

That would be an unpleasant looking dish. Potato and macaroni salad is usually made with paprika sprinkled on top.

Well, I'd leave out the relish and vinegar, for starters. Personally, I'm kind of a purist. I'd settle for mayo and eggs.

Yeah, well I'm a "purist". That's why my Southern potato salad has relish and vinegar.
