I stopped peeling my potatoes for everything.....back in the 80's I think. Just scrub them up good and clean

I only peel off the green, or the bad spots.

My ex mother-in-law made the best whipped potato salad, and she served it warm. It had eggs, purple onions, celery seed, Dijon mustard, salt, pepper, smoked paprika, and ranch dressing instead of mayo.

I always like potato salad with a touch of vinegar or pickle/pickle juice. It just makes the flavors pop. I have several different recipes I make-- German with no mayo, red potato w/ half sour cream, potato and egg with a bit of sliced scallion.

I add sour cream and mayo to mine, leave the skins on (I use red and cut them small) fresh dill, salt and onion powder.

I like to dice radishes and incorporate. A bit more bite than just onion.

I add Clausen dill pickles, (the hot ones really spice it up) and radishes to my potato salad

Fresh dill sounds good !

I love making potato salad with the small red potatoes.

For the dressing I take a small amout of mayo - then mix with lemon juice and white vinegar - then I'll add plain yogurt to that mix - so more plain yogurt than mayo - I'll buy the plain yogurt with the least amount of sugar. This is a much healthier dressing than just plain mayo. I actually like this dressing better now.

I LOVE THAT....my husband's step mom made something like that called Hillbilly Potato Salad with homemade mashed potato( but when I get lazy I used boxed!!)
