If you want tex-mex, but upscale, I recommend either Jibarra or Dos Taquitos Centro (the downtown location) which has some amazing food at night (lunch tends to be simpler, but still yummy).
I don't think of Jibarra as Tex-Mex. They bill themselves as "modern Mexican" and I think that fits. Nothing about the flavors or presentations come off as Tex-Mex.
just ate at Chubbies Tacos in Durham near 54 and 751. Not the best ever, but still highly recommended. Especially for someone who wants an "introduction" to more authentic Mexican, without going off the deep end. (Personally, I like more authentic, but this is a place that I could bring less adventurouse friends without freaking them out, yet I'd still get a good taco.)
