It may be a cartoon, but IRON GIANT is one of the best sci-fi movies out there.

I, ROBOT with Will Smith was pretty good to.

Star Treks II, IV & VI are good sci fi movies even as stand alones from the series

I see a lot of great classics listed here.
A couple suggestions I don't think I saw though...

The Day After (1983) (TV)
Silent Running (1972)
20000 Leagues Under the Sea (1954)
Westworld (1973)
Forbidden Planet (1956)
Outland (1981)

And of course who can talk about good scifi without the classic (tongue firmly planted in cheek)...
Plan 9 from Outer Space (1959)
Seriously though it is so bad it is good, lol. Any scifi buff worth their salt has to watch it at least once.

The best sci-fi comedy ever: Galaxy Quest. It works on several levels. Besides being very funny in its own right, it's both a parody and tribute to Star Trek, and a shout-out to sci-fi fandom.
