depends where you pick them. South is earlier than that but north is correct time.

I live in Wells. In a predictable weather year we start picking them in mid to late May. Remember to always leave an ample sprout or two to keep from hindering the plant's growth.

What do fiddleheads taste like? I read about them many years ago and always wondered? I used to have access to fresh aspargus every year and kind of figured they would taste like that--but really have no idea?

They taste like chicken.
No really they are hard to describe. The flavor is unique. A cross between asparagus and avacado with some mud thrown in. You either like fiddleheads or you don't and there is really no middle ground. I love them like I love smelts. In season and for a brief period. After the 5th or 6th meal of them and a fiddlehead and mushroom soup I can go a year without them and not miss them all that much. They are really not something you "crave" like a soft shell lobster in August or the first crabmeat roll of the season. I do save some to go with fresh deer meat in the fall as the two go well together. Like anything else if you have too many you'll tire of them.

Chicken huh?!! That's a hoot!!! Best laugh I have had in a long time--it caught me totally by surprise.

I don't know if I would like them, but would really like to try when I get there. I am one of those people that will try new foods at least one time. Well, not haggis, odd organs or innards though.

I remember smelt season in the Adirondacks--tasty, but got super tired of the Fry Daddy mess in the kitchen.

I just saw that the Northwoods Sporting Journal published my photo and quote on page 67 of the May 2013 issue.

Also see they published a 2nd photo and quote of a muskrat on page 51.



The issue also includes an article on fiddleheads by another author.
