last night was shrimp stir fry with lots of veggies. There's still shrimp to be eaten, so tonight will be pancetta or guanciale wrapped shrimp w/ BBQ sauce and a strawberry/smoked mozz/toasted almond/arugula salad with balsamic vinaigrette. Mixed berries on blueberry cake with cream for dessert.

Now I bought my 79 cents pineapple from Kroger as it is such a great buy,I dont eat pineapple as it is too sweet,so I freeze chunks of them and plant the top in the soil,some day it will become a pineapple tree ??
They come from Costa Rica,not Mexico?

I buy pineapple every week at Kroger.....never seen it at that price though. I would be thrilled! I do know someone who has planted the top....I will get back to you in a couple of years, to let you know how it is doing. LOL

We have finished our Easter dinner and it was incredible! We ended up having rack of lamb with roasted baby potatoes, tabbouleh, french feta, kalamatas and a fresh baked baguette. Dessert will be later and it is a choice of tres leches cake or oreo ice cream cake.

Ground beef tacos and that's it.

DH made me a loaf of dark rustic bread with nuts and seeds. Fresh out of the oven - nothing better.

Ham, 1/2 sweet potato with almost a spoonful of brown sugar, creamed corn, and a couple deviled eggs. I actually made the deviled eggs (following and mixing various recipes for a classic version). It was ok. I liked my Mom’s much, much, much, much better. If only she could be here to hear that. I think she might be shocked.

To drink: glass of wine and water.

Dessert: if I can find room… , I might share a Costco tiramisù mousse cup with hubby.

We are getting a new fridge tomorrow and I was able to put together a nice lasagna with lots of lots of leftover sauce from the freezer and cheese from the fridge and added some spinach too. Made a big salad to go with.
