I made Spaghetti Carbonara tonight. Turned out really good. I was nervous making it because I've heard you can end up scrambling the eggs if you're not careful. But it ended up nice and creamy and flavorful. I used 4 free-range eggs. Three yolks and one whole egg. I served it with a side salad of simple greens with an olive oil and balsamic vinegar dressing.

Cooked one bone in pork chop with my applesauce topping, a box of Hawaiian stuffing mix (Aldi purchase -- surprisingly good) and some string beans with almonds. Split it in two and enough for another complete meal. A couple of chocolate covered dried cherries and herbal tea for dessert.

Tried a mom and pop place on a neighbor's recommendation. It was awesome and a bargain. Fried chicken, green beans, hush puppies, unsweet tea.

We had leftover stuffed artichokes along with a pepper, snow pea, garlic stir fry. And a glass of pinot noir!
