I’m craving the meatballs with chili sauce and grape jelly, so I guess we’ll have that with the leftover mac and cheese.

Tonight baby meatballs (dill,curly parsley,egg,bread crumbs,salt/black pepper) served with garlic mashed potatoes,tarragon glazed carrots.For the non meat eaters green bean,coconut,curry and urid lentil subzi with cilantro chapatis.To drink Löwenbräu or lemon water.For dessert lychee and kiwi fruit salad ( kiwi,lychee,fresh mint,honey and lime juice)

Early morning for me so early dinner too. Hadn't defrosted anything until late last night so I had to make do with a pork chop. Used up some old Shake & Bake pork coating, adding some fresh minced garlic.

First I made my big pan of veggies (9 different kinds again), thinking I might save some for soup later this week ...


But nope, I ate them all! They were delicious. The pork chop was good too, just maybe 30 seconds overcooked in a couple of areas ...


Had a bit of avocado too -- LOVE avocado but lately I haven't had much luck with them. Today's was good!

Overall a yummy dinner. Happy Tuesday, everyone!

Finishing up the pasta with a lentil and carrot sauce, toasted Italian bread, and a chopped salad with sliced hard boiled egg. Just herbal tea for dessert --staying away from the sugar and wine for a week or so.

Thick grilled pork chops, yellow squash casserole and fried okra. I wasn't happy with the squash casserole. I don’t have a recipe, I usually just wing it but something was amiss with this batch.
