Right now we have no kitchen- it's being demolished and remodeled. So for the foreseeable future it's going to be soup and sammy's, lol.
I remember those days -- UGH! Please start a thread on your remodel -- I love those before-and-after threads (and I know I'm not the only one)!
Tonight (late afternoon) for me, first a salad: butter lettuce, fresh spinach, shredded carrots, sweet onions, grape tomatoes, snow peas, and corn, PLUS a bit of avocado (AGAIN, my avocados are ALREADY going bad, so I salvaged what I could). I also, for only the 2nd time ever, added FRUIT to a green salad -- some tangerine sections sliced into small pieces. I was astonished at how good the combo of greens, onions, corn, avocado, etc. PLUS some sweetness from fruit is! (How did I get to be this age without knowing this?!)
A couple of hours later, I had my "real" dinner -- comfort food to me: chicken wings with Sweet Baby Ray's barbecue sauce (added at the table), stir-fried onions and mushrooms, and the last of the corn plus the tiny bit of avocado that was left.
Everything was so good. I'm eating soup 3 days a week (want to lose 10 pounds) so I really enjoy these COOKING days!
I made chaffles today so I'm grilling a burger for dinner. Haven't had one on "bread" for a while. Chaffles are the closest thing but surprisingly good.
