In the West Texas desert, near Marfa, there is a company (Village Farms) who grows hydroponic tomatoes. I was at Sam's this week and they had a huge container of full size tomatoes for $3.48. There were 9 tomatoes in there I think - more than we would usually use in a short time frame but they were so pretty and most of their tomatoes are really tasty so I bought them. DH suggested we stuff and bake some so that's what we had tonight. Tomatoes stuffed with a shrimp and crabmeat mixture topped with buttered cracker crumbs. Sides were roasted brussels sprouts and corn with sautéed onion, jalapeño and red bell pepper.

Broiled cod fillet with Basmati rice seasoned with a little oyster sauce and some very fresh asparagus. Everything got a squeeze of lime juice. The fish got a sprinkle of dill. Nothing fancy, but it sure was tasty.

Made a pot of Peet's Major Dickason's Blend coffee to go with, and had a scoop of salted caramel ice cream for dessert.

The Major is a dark roast, very intensely flavorful coffee that defies sugar and cream. I always drink my coffee black, so this is one of my favorites, as it's blended to be drunk straight up with nothing added.

Last night’s dinner was spaghetti and meat sauce, broccoli, and vanilla ice cream.

Tonight’s dinner is red snapper with garlic lemon sauce, roast potato wedges, and spinach salad.

Today egg noodle casserole served with shaved cucumbers in a yogurt,dill,pinch of sugar,lemon dressing.To drink Löwenbrau.For dessert 1/2 a pink grapefruit.

Tonight is rosemary and soy sauce/brown sugar pork chops.

Tomorrow will be those tasty chicken drumsticks again.

Saturday-IF we have power, I'm not sure yet...
