Three out of the four of our little family are finally on the mend from a nasty case of covid. My 16 year old somehow evaded catching it.
We are "celebrating" with a light and healthy feeling meal of baked haddock and roasted asparagus.

Oh, tonight I had soup. Campbell's. Yeah. It was OK for something quick and easy, which I needed because I still have a lot of work to do for this coming week ... but I look forward to cooking again!

Potato burgers.... (Depression Era fried potato sandwiches. What you ate when you were out of meat stamps. Now they are our number one comfort food. Dress them up like a real burger.)
