The bean & smoked pork stew I had intended for last nights dinner was not cooked enough by dinner time last night, so we had pizza instead. I am now cooking the beans some more, they are taking forever to cook & get soft. That hopefully will be dinner tonight, with some bread. It tastes good already.

So uninspired. Elk sausage on the grill, butter nut squash with pumpkin spice butter, and cukes.

Braised beef with wild mushrooms, sauteed onions, bell pepper, garlic and spices. Served with mixed grains and shredded, pickled beets.
(Like always it looks huge, but my plates are only 8" )

Crock-pot chicken cacciatore tonight -- hadn't had it in a LONG time and needed something easy today. Two chicken leg quarters, some onion & green pepper & mushrooms & zucchini, some Italian seasoning, some minced garlic, a 28-ounce can of diced tomatoes. I added chili flakes at the table to give it a little kick.

Ended up with 4 good-sized portions with just the 2 leg quarters (I expected 3 portions), so I will freeze a couple of them. I had it over something called Carba-Nada fettuccine, which I had completely forgotten I'd bought many years ago on amazon (found it in the back of a cupboard ). Bought in 2015, the "best by" date was in 2016, but I never bother with those things when it comes to dried pasta.

Boiled it for 5 minutes, and it tasted TOTALLY FINE -- and, somewhat to my surprise, just like "regular" pasta!

No picture, I forgot (and I'm running out of pictures in my C-D account! ).

Given the price of food these days, I may need to forage in my cupboards again ...

Breaded pork cutlet, applesauce, a Yukon baked potato with butter and sour cream and a chopped salad. Totally caved and ate 1/3 of a Ritter chocolate cashew bar for dessert with a cup of lemon ginger tea. Sometimes you just have to have chocolate.
