Simple but just what I needed... gigantic bowl of garden salad... 1/2-head of lettuce, Roma tomato, sundried tomatoes, red cabbage, carrot, celery... with fresh lemon-olive oil-PH salt. Fancy Papers IPA to drink.
To be followed by an espresso, then bed by 8pm. I'm so exhausted lately, even double strength ristretto doesn't keep me awake.
Same meal for the next 2-days... I'm interviewing like mad... phone, web, face-to-face & just too pressed for time studying & preparing all day to do much else.

Our dinner this evening was a small mixed green salad with a balsamic vinaigrette, a bowl of vegan mushroom barley soup with smoked Beyond sausage, and fresh from the oven whole grain baguette. Pinot noir vino to drink.
trying a Tik Tok craze -- roasted tomatoes & feta, doing mine over zoodles instead of cooking pasta for it, and I'm roasting some chicken thighs on top.
I woke up thinking of some small sirloin steaks in the freezer. I think I’ll marinate them, then stuff them with a bit of leftover mushroom stuffing. Mashed potatoes and fresh asparagus.
