Going to fry up some smoked sausage and chopped onion, cut the sausage in small pieces, then put it all in the same sauce I use for cocktail wieners and simmer for awhile. Then I'll eat the pieces with a toothpick. Husband will say he doesn't want any, then he'll come over by me and take a big ole bunch. Along with that, I may have some olives, some cheese and crackers, and quite possibly a vegetable or two or maybe even three with dill dressing to dip the pieces in.
Another early day for me ... just had dinner a little while ago (around 3:30 p.m., I feel like I am 90! ). Thursday is my work-at-home day so I had time to try something new -- baked barbecued chicken thighs. Honestly, my normal way of doing bbq in the oven is to just slather the meat in bbq sauce after it comes out of the oven, but I found a recipe that suggested that it would taste better if it were basted over time in the oven. Um, OK, don't usually have time for that, but today I did ... and it was worth it!
Had just bought some chicken thighs (on sale for 77 cents a pound, can't really go wrong!) so I tried the new recipe (it's at Two Ingredient Crispy Oven Baked BBQ Chicken | Bowl of Delicious if anyone's interested). Holy crap, the chicken was fantastic. I mean, I love my down-and-dirty quick method, but this definitely tastes a LOT better -- especially the skin, which got wonderfully crispy. I had it with some roasted potatoes simply because I had to use them up, and some rosemary-garlic bread. YUM!!
