Got a deal on eggplant ($1). It has been a very long time (if ever) since I purchased one.

Trying a new recipe: eggplant parmigiana. I'll serve it over spaghetti. I always feel like I should have a vegetable even if the main course is a vegetable dish so I'll steam some crook-necked squash to accompany it.

Dessert is freshly sliced Hawaiian pineapple.




Hoping for the best.

Chicken soup (boiled a roasted chicken carcass, it was stuffed with onion rosemary, lemon) with squash and kale.
Beef and bean tortillas with guacamole and salsa.

My family loves eggplant and I found an amazing new recipe Confessions of a Foodie: Pesto use #1::Eggplant Imbottiti I am eager to try today.

For dessert homemade plain yogurt with a bit of granola and small orange pieces.
