Well, i got carried away..... Made the corn dish... then remembered some people can't eat corn...OOps!

So, I made squash with cauliflower and red onion with red curry, cilantro, cumin, salt, pepper, parpika, evoo, pepper.... and it has been roasting in the oven.... but then that didn't look like enough....LOL.... I think the Married INTO Italian Kicked IN....LOL

SO I grabbed the Bag of Baby Carrots.... boiled them up for a few minutes and then while they taking a bath fried up some onions and celery in butter and evoo with a little lemon juice, garlic, salt, and parsley.... then drained the carrots and mixed the two... they are in the oven mixing nicely now.... LOL.... I think I have enough veggies with the three different kinds..... My grandmother is going to be sooooooooooooooooo annoyed with me!!!!!

O dear...what a lot of veggies! ... you sound like me...never knowingly under-catered...

Elston - my kids love Yorkshire puds and would eat them on spaghetti if I let them! I always make individual ones with veggie oil in a muffin tin, and have never yet made the traditional big yorkie under the roast, ... so obviously not a true blue Brit

That sounds great! Not my diet.....but would love to see your recipe.

CLean out the fridge night. Hubby is warming up: chicken legs, BBQ'd steak, and a pc. of salmon. He's also steaming broccoli and cauliflower and making cheddar/broccoli rice (a pkg.) I think we'll have enuff.

Kelsie, I read where those little onions are easier to peel if you blanch them first for just a min. or so. The peel's supposed to slip right off.

Tonight it's the leftover baked chicken withh some pasta, ratatouille and mixed veggies.

I have carrots and leeks to use up. Going to stir-fry the leeks and parboiled carrots in oil with lemon pepper, and stir-fry some chicken in a honey-lemon sauce. Add mushrooms, peppers, and a touch of basil.

Being the gourmand that I am, we are having leftover sloppy joes tonight! (I just don't feel like cooking for some reason! I think because it is still so darn hot here!)
